  • 800 grams Rice
  • Bell Peppers

Step 1: Prepare the Chicken

  • Start by boiling the chicken in a pot until it’s well cooked. This usually takes about 20-30 minutes, depending on the chicken’s size and type. You can add a pinch of salt to the water for added flavor.

Step 2: Season the Chicken

  • While the chicken is boiling, season it with thyme, universal seasoning, and curry seasoning for chicken. This step helps infuse the chicken with delicious flavors.

Step 3: Cook the Veggies

  • In another pot, heat some oil and add chopped onions, ginger, and garlic. Sauté until fragrant.
  • Add chopped bell peppers to the pot and stir-fry until they start to soften.
  • Next, add spinach to the mixture and continue to stir-fry until it wilts.

Step 4: Spice it Up

  • For some extra flavor, Stephanie recommends adding a pinch of salt to the oil while sautéing the veggies.

Step 5: Flavor the Chicken

  • By this time, your chicken should be well cooked. Remove it from the boiling water and add it to the vegetable sauce. This allows the chicken to absorb the flavors of the sauce.

Step 6: Final Seasoning

  • To ensure a well-seasoned dish, add soy sauce to the mixture. Be careful not to overdo it; you can always add more later if needed.

Step 7: Cook the Rice

  • Boil the rice separately, following your preferred method. Stephanie suggests rinsing the rice after boiling to reduce starch.
